Caroline's Story

I have always had a sweet tooth, especially when it comes to chocolate. Near the end of my senior year in high school I ended up in the emergency room after eating a Hazelnut. I had apparently developed a nut allergy. Upon further allergy testing I found out that I was allergic to both peanuts and treenuts. I learned quickly that I could no longer eat most chocolate or anything from a bakery. The doctor advised not even eating anything with a "processed on the same equiptment as..." label, which ruled out almost all chocolate and candy. So, not being able to go on without sweets, I decided to learn to make my own! What many saw as a burden turned out to be a blessing in disguise.
 
A couple years later I began looking at colleges for pastry chefs when I came across a Cordon Bleu Pastry Chef textbook in a used book store, complete with notes, and decided that I would see if I could teach myself! I eagerly starting making all sorts of cakes, mousses, and countless other French desserts. Through trial and error I began to develop dependable recipes, and my family and my coworkers at Home Depot were instrumental in helping me taste everything and give me feedback.
 
God has blessed me with a passion for creating delicious and artistic treats. I genuinely love blessing others with them, and my desire is to bring Christ glory through this. I take no credit- He first gave me the allergy, followed by a passion and an ability, and He gets all the glory!
 
The name Carobeans is a cross between Caroline and Cacao Beans, where chocolate originates!
